Since the first cars were made people have strived to improve on what the manufactures have created. In the old days it would have been hardware changes be it internal engine changes or carburetors.
With the introduction of electronics the opportunity to start playing with electronic components arose. This was in the early years very limited by the technology of the day and started with trying to update some of the very early electronic technology with slightly newer ones and not much more. In the 80's the silicon chip and micro processor were introduced in to the automotive industry and the with it the term 'chipping' was born. The term chipping came from the way in which these early ECU (Engine Control Units) were modified. Due to the chip that contained the memory for the processor being of a type that was not reprogramable the 'chip' had to be replaced hence the term being chipped arose. The next generation of memory that appeared had a reprogramable format that allowed the chip to be wiped with the use of a Ultra violate lamp and then reprogrammed via a chip programmer. This was the start of re-mapping rather than chipping and with the introduction of the flash reprogramable chip life became much easier for the tuning industry. There was still the need to remove the ECU form the cars with these ECU's as the use of OBD (on board diagnostic) programing was not available. The next great break through was the OBD programmable ECU that took advantage of the flash reprogramable chip and completely removed the need to open or disturb the ECU and there for make it harder to be detected by the car dealers.
Today there are hundreds of different types of ECUs and protocols made by lots of different companies. The basic principles are still the same in the way the current ECUs work. The never ending battle between the development, security of the car and ECU manufactures and tuning industry continues.
